Sounds to me like he's in pain somewhere, and it sure may be the saddle you're using. It may have never fit right, and it's been soring him more and more til he finally said "enough!" I would sure have him checked out by your vet before I got on him again.

Tom Thumbs are a tool to be used judiciously. Great for you guys who have broke horses and have them like the bit. It also tells me that you guys have educated your hands!
